National Pie Day — now this is my kind of holiday! I've always loved pies. For my birthday for years, my Mom would make "birthday pie" rather than birthday cake. Strange? Well, maybe. 🙂
In honor of National Pie Day coming on Sunday, I thought I'd share my favorite pie recipe. This is Mom's Lemon Pie recipe and the one that I had for birthdays for many years.
Mom's Lemon Pie
Juice of 2 large lemons or 3 small lemons (probably equals about 1/2 a cup)
2 egg yolks
1 can Eagle Brand milk
1 Tbsp. of heavy whipping cream, optional
Graham cracker crust
Mix together the lemon juice, egg yolks and Eagle Brand milk. Add a little whipping cream to make it creamier, if you want. If you make your own graham cracker crust, save some of the crumbs to sprinkle on the top! (We never put meringue or any other topping on this pie.) Chill.
Oh my goodness – I may have to make one of these tonight. It's definitely one of my "comfort" foods that brings back the feel and sense of security and home. This may sound silly, but it's true.
